THE PROPERTIES OF POMEGRANATE SEED AND FATTY ACID COMPOSITION OF ITS SEED OIL

1 Batı Akdeniz Tarımsal Araştırma Enstitüsü, 07100 Antalya Viewed : 1865 - Downloaded : 3200 Dry matter, protein, oil, ash contents were determined in the seed of Hicaznar cultivar variety, with the highest production amount in Turkey, of pomegranate (Punica granatum) fruit. In addition to these studies the amount of P, K, Ca, Mg, Na, Fe, Cu, Zn, Mn content of the seed and, the composition of fatty acid and refractive index of pomegranate seed oil were determined. These studies showed that the seed oils constitutes of six fatty acids comprising of palmitic (4.62%), stearic (2.77%), oleic (6.83%), linoleic (5.81%), arachidic (1.14%) and punicic acid (78.83%).
